La primera grabación como músico de sesión fue en el disco Rain dogs de Tom Waits, participando con un sonido peculiar en sus posteriores discos Franks Wild Years, Mule Variations y Real Gone. Con Elvis Costello colaboró en los discos Mighty Like a Rose (1991), and Kojak Variety (1995).
Mule Variations won a Grammy Award for Best Contemporary Folk Album and was nominated for Best Male Rock Performance for the track "Hold On". It has sold more than 500,000 copies worldwide. In 2012, the album was ranked number 416 on Rolling Stone 's list of The 500 Greatest Albums of All Time .
Ribot worked with Waits on many of his following albums including Franks Wild Years (1987), Big Time (1988), Mule Variations (1999), Real Gone (2004), Orphans: Brawlers, Bawlers & Bastards (2006) and Bad as Me (2011). He has appeared on Elvis Costello's Spike (1989), Mighty Like a Rose (1991), and Kojak Variety (1995).
