All of the characters are at least older teens or adults. Except for Frisk, who is around eight. Since Toriel refers to herself as "an old lady", we can infer that she and Asgore are both older people. Undyne and Alphys are around the same age.

Boss monsters are immortal without children, and the two of them fought in the Human-Monster War, which from the intro is depicted as being fought with weapons like swords, while the story of Undertale takes place an unknown period after 201X.

Toriel and Asgore are a lot older. Like, possibly thousands of years older probably, or at the very least Asgore is. We see Asgore in the battle of humans vs. monsters, which had to have taken place long ago. Toriel and Asgore are boss monsters.
Chara, also known as the fallen human, is the first human to fall into the Underground. Chara is their "true name" on the naming screen, though their name typically varies on what the player enters. They are distinct from the eighth fallen human, who is the protagonist of Undertale.
