Santini pelasi juniorina Fesches-de-Châtelin joukkueessa, josta siirtyi 1969 AS Saint-Étienneen.Hän pelasi Les Vertsissä kaikkiaan 12 kauden ajan ja oli mukana voittamassa neljää Ranskan mestaruutta. Hän oli mukana myös Robert Herbin'n valmentamassa ryhmässä, joka eteni Euroopan cupin loppuotteluun kaudella 1975/76.. Santini jätti ASSEn 1981 ja siirtyi Montpellier’hen.
