Sealing the wood with oil, and letting it sit for a couple of days will give you a bit of grain/ rings, but you should really use a soft wood like butternut or sycamore. Both have nice colors as well as grain. Oils like vegetable or olive take a very long time to polymerize, and don't offer much to the carving in the way of aesthetics.
