I’ve heard people explain that it’s because he’s a turtle, but I find that pretty ridiculous, since I don’t believe many of the other monsters age based on what species they resemble, like the dogs. I always assumed he’s a boss monster, and that he may have lost loved ones in the war, which shows in his age.

We found this turtle with an injured eye on the road. We brought him home so that the eye could have a chance to heal heal without the risk of him being killed. I decided to call him Gerson.
It's a combination of the turtle thing and just him generally being knowledgeable. Gerson refers to Boss monsters in such a way that it's very clear that he isn't one, and on top of that his son Alvin presumably still exists in undertale, similarly to how Suzy is a thing.
