The only monsters we know to be around during the war are Asgore and Toriel, who are explicitly unable to age, and Gerson, who was likely of a much more fit age to fight during those times, even if the monsters were overpowered 100 to 1 (also keep in mind that turtles age very slowly). It's also stated that Undyne grew up looking up to Gerson.
